Tropical Chia Pudding Parfait

Did you know that chia seeds are a nutritional powerhouse? According to the Harvard School of Public Health, chia seeds are a complete protein (containing all of the nine essential amino acids) and a great source of fiber and calcium. Chia seeds are the richest plant source of omega-3 fatty acids which have a beneficial effect on cardiovascular health by lowering cholesterol, regulating blood pressure, and decreasing inflammation.

This delicious tropical chia pudding parfait is a fun way to play with flavors and colors to delight your taste buds AND your eyes. Plus with all of the healing benefits of the organic superfoods and herbs in Light Up, you are giving your body what it needs to handle stress better so you can feel your best.

Ingredients:

Light Up chia pudding layer

  • 1 cup plant-based milk
  • 1 scoop of Light Up
  • 2 tablespoons chia seeds

Mix Light Up and plant-based milk of choice together until Light Up is completely mixed in with no clumps. Add chia seeds and stir until they are completely mixed in. Let sit for ten minutes and then stir again. Set mixture in fridge until desired consistency is achieved. (Minimum 1 hour or for best results, overnight.)

Vanilla chia pudding layer

  • 1 cup plant-based milk
  • 1 tablespoon agave
  • 1 tablespoon vanilla
  • 2 tablespoons chia seeds

Mix all of the liquids together first, then mix in the chia seeds in until smooth. Let sit for ten minutes and then stir again. Set mixture in fridge until desired consistency is achieved. (Minimum 1 hour or for best results, overnight.)

Once both puddings are at the desired consistency select and prepare your fruit of choice (we love banana + mango or banana + mixed berries) and get ready to get creative!

Note: This recipe yields two cups of chia pudding. It can serve two people with large layered parfaits or can be divided into four smaller portions.

To assemble the parfait

Grab your glass(es) of choice and start by spooning some of the Light Up layer in. Next, add a thin layer of sliced banana or your favorite fruit. After the first fruit layer, add a few spoonfuls of the vanilla pudding. Next, add the second layer of fruit (sliced mango or mixed berries) followed by another layer of Light Up chia pudding. Once you've added all of your desired layers, top with a little more fresh fruit, some flowers, mint, or anything your heart desires!
